August 2025 In My Kitchen

Hi everyone on this last day of August. We had rain in the weather forecast for the last few days, but it wasn’t more than a drizzle. Hopefully tomorrow there’ll be more.

I’m joining In My Kitchen again even though August wasn’t all that exciting with respect to kitchen-based or other food-related activities. I have a few plans for the first week of September. Here’s hoping I can be more involved in the kitchen over the rest of the month too.

I didn’t cook dinner at all in August, but I did create a few little treats for myself and sometimes my fellow residents. Like, on August 4, I made a mascarpone-based dessert with raspberries and blueberries on top.

I also prepared overnight oats again. The next morning, I added the toppings and enjoyed my healthy’ish breakfast. Now I doubt that it’s actually healthier than my regular breakfast, but who cares?

I made a few smoothies too. In one of them, I put pineapple, spinach and almond milk. My idea was to prove to one of the staff, who didn’t like spinach, that you won’t taste spinach in smoothies. Guess what? We didn’t taste the spinach, but we didn’t taste much of anything else either. I eventually added a banana and some honey, but it still was one of the blandest smoothies I’ve had.

Like I said on Friday, I also have been making coffees with foaming milk on top. The truth is I don’t really like them, but my milk frother was €70 and now it feels less like a waste of money. Besides, my fellow residents like the coffees.

Lastly, yesterday I spent the day with my spouse in our house. We had originally planned to cook dinner together, but ultimately my spouse ended up doing everything. We had an easy broccoli and chicken stir-fry with hot sauce and noodles. My spouse asked me whether it was as good as the meal delivery service meals. 😉 It was a lot better!

Speaking of which, the meal delivery service now has “2.0” written on many of its foods. I get Siam sauce 2.0, for example. Once, I even got “cauliflower 2.0”. Well, what can be improved or changed about just cauliflower? The brown rice doesn’t have 2.0 written on it, but it’s been horribly undercooked lately. I am of the opinion that the higher-ups deciding which meal delivery service to contract, or that the institution even has to contract one rather than operating its own kitchen, should be forced to consume a meal delivery service dinner once a week.

Friday Feels (October 4, 2024)

Hi everyone. I have a ton of ideas of what to write about floating in my mind, but because of this I struggle to pick one. I’m going with Deb’s Friday Feels. I loved coming up with an F word last time.

F word

My F word for this week is “fruit”. Like I mentioned earlier, I bought a slow juicer. My spouse cautioned me against using it daily because of the risk of microplastics getting into my juice, as the juicer is a Chinese brand. For this reason, I’ve only used it once so far and only juiced an apple.

I since discovered that I can do far more with my blender (which is safe to use according to my spouse) than I used to think. I mean, I have one book of smoothie recipes that has a ton of juice-based ones in it, like recipes for which you need carrot juice, blueberry nectar (which I found out is just sweetened, thickened blueberry juice), etc. I decided to look beyond this book, as I have many other books on the topic of smoothies and juicing.

Today, I made my first green smoothie. Of course, I didn’t use just greens, as that’d make the smoothie taste horrible. I used spinach, pineapple, banana and coconut water. I think this smoothie can compete with the smoothie I made a few weeks back that I said was my favorite. My fellow residents loved it too.

What made me happy?

I’m in a pretty good mood, but there’s little specifically that made me happy. Then again, being in a good space mentally is a good enough reason to be happy, in my opinion.

What made me sad?

Not sad per se. More like frustrated. A skin infection on my face. Thankfully, the staff finally saw that it needed treatment yesterday and the institution nurse agreed, so I now have a salve for it.

Oh, and the fact that the entire town was cut off from WiFi yesterday afternoon and it wasn’t solved until this morning. This is costing the institution lots of money, as the night staff rely on WiFi-connected technology to know when we need them, so now each home had to have its own night staff.

What made a difference?

Two things. First, my support coordinator is genuinely listening to me with regards to my struggles in play therapy and in general. I have this issue with being very much behind emotionally and I struggle with this, because sometimes I can explain the theory, but this doesn’t mean I can help myself in reality.

Another, somewhat related thing was the video interaction support I got on Tuesday. Then, it was just someone recording me and a staff interacting on video without any feedback, but I’m hopeful the staff will learn something by looking at the video at a later time.

Foods I Would Eat If Calories Or Nutrition Didn’t Matter

Hi everyone. So I gave up on the #AtoZChallenge, but I’m not giving up on blogging more regularly this month. Today, I’m participating in Thursday Thirteen, even though it’s still Wednesday. This week, I am sharing foods I would eat if nutrition or calories didn’t matter.

1. Crunchy muesli. I currently eat regular muesli with my quark for breakfast most days and have the crunchy kind only as a treat. If calories or nutrition weren’t an issue, I’d gladly swap it for the crunchy kind. I’d also vary the flavors, eating multifruit crunchy muesli, nut crunchy muesli and coconut crunchy muesli. Currently, since I only have the crunchy kind as a treat, I usually have the nut one.

2. Peanut butter. Okay, that’s not a change from my usual diet, as I usually eat that most days now that I no longer need to lose weight and can choose whichever topping I like on my bread.

3. Chicken. Give me chicken almost every day! I love some good hot wings, chicken tenders or any kind of fried chicken.

4. Licorice. Particularly, Venco’s honey-flavored licorice.

5. Winegums. I’ve never figured out what these are called in English and my screen reader mispronounces them (they’re pronounced “wine gums”), even though the packaging here in the Netherlands advertises them as “real English winegums”. I love them though.

6. Blueberries. Okay, you’d expect me to list pizza, pancakes and fries here, and I might, but I’d probably miss fruits and veggies if I just ate those. I would have to add in another rule to my “not an issue” here though: that cost shouldn’t be an issue either.

7. Pasta. I would definitely eat a ton of pasta and it wouldn’t matter if it was whole grain (which we get here) or not. I in fact like the whole grain variety at least as much as the white pasta.

8. White rice. My care agency’s meal delivery service provides only brown rice meals, which I’ve come to tolerate but if calories and nutrition weren’t an issue, I’d definitely eat white rice.

9. Chips. Particularly Pringles.

10. Salami. I hardly eat that now because it’s not the healthiest, but I’d certainly top my hot sandwiches with it (along with some cheese) if calories didn’t matter.

11. Stroopwafels. And certain other types of large cookies I love. I am quite a picky eater even where it comes to treats, so it isn’t like I’d eat every biscuit on the market. Stroopwafels though, yum!

12. Curly fries. I love those! Can’t explain why the curly kind are better than the regular ones, but they are.

13. Broccoli. I need to add in a vegetable and my favorite is broccoli. It’s absolutely the most versatile vegetable out there if you ask me.

What food would you eat far more of than you currently do if calories or nutrition weren’t an issue?

The Wednesday Hodgepodge (January 10, 2024)

Hi everyone. Sorry for not having touched the blog in a few days. I really mean to blog more this year, but have been struggling a bit lately again so no inspiration. Today it’s time for the Wednesday Hodgepodge though, so this post should come relatively easily. Here goes.

1. What’s a change you’d like or need to make this year?
I’d like to taper at least one of my medications.

2. Break the ice, on thin ice, ice skating, tip of the iceberg, ice cold…which icy idiom applies to your life right now? Explain.
Ice cold. It’s been freezing for a couple of days now. It’s a dry frost though, so no need for people to remove ice from their cars. In the early mornings, the temperature dropped to -7°C with a real feel of -15°C.

3. What’s a project you’ve been putting off? Will you get to it this month? This year?
Decorate my room. I’m not sure I’ll get to it this month, but definitely this year.

4. Of the fruits that grow well in winter which ones have you tried? Which is your favorite?

pomegranates, clementines, persimmons, passion fruit, pears, grapefruit, lemons, pomelos, kumquats
I have tried about half of this list: pomegranates, pears, grapefruits, clementines, lemons and that’s it I think. I don’t really care for any of them, but if I have to choose one, I’ll go for clementines.

5. What do you think it means to be courageous?
I don’t really know. I think it includes standing up for oneself and others in the face of persecution. Then again, it could also include standing up for what’s right, but what’s “right” depends on your viewpoint. Like, I’m pretty sure half the Hodgepodge’ers wouldn’t feel included in my “all-inclusive” society because their values do not align with my purpose of inclusion. In this sense, courage is really not unrelated to one’s political or religious affiliation and whether someone is a hero or an idiot depends on whether you agree with them or not.

6. Insert your own random thought here.
On Saturday, my spouse will be visiting me after picking up the new car we’re getting. I can’t wait to sit in our “freezer Fiat”, as we’ve been jokingly calling it. We call our current car the “heat-up Micra”, as it has no air conditioning and is black and our previous car had broken heating so was ice cold in winter. The “freezer Fiat” will, thankfully, come with air conditioning.

The Wednesday HodgePodge (March 1, 2023)

Hi everyone. It’s Wednesday again, so I’m joining the Wednesday HodgePodge yet again. Here goes.

1. Hello March! Is it coming in like a lion where you live? How do you feel when it rains?
I have no idea what the saying that March comes in like a lion means. Probably something about rain, given the next part of the question. If I’m correct, no, it doesn’t rain here. It’s cold though: 7°C at midday and -4°C at night.

I generally don’t like rainy weather, though I can handle it better than I used to like a year or two ago.

2. What’s something you’d like to do differently this week than the last? Explain.
Last week was better than this week has been so far, so honestly, I wouldn’t really change a thing.

3. March 1st is National Sunkist Citrus Day…do you drink orange juice? Orange, lemon, lime, tangerine, grapefruit…what’s your favorite citrus fruit? A dish you love with a citrus fruit as one of its key ingredients?
I don’t usually drink orange juice. It’s not that I don’t like it, but it’s not among my favorite drinks either. My favorite citrus fruit, if I have to choose one, is the tangerine. I honestly don’t care for anything citrussy except for its scent in essential oil blends.

4. What do you consider to be your culture. Elaborate.
This is a tough question. I don’t particularly associate with my native language (Dutch) or country for that matter. I initially wrote that I sort of consider myself European, but that’s not even true, since I do write in American-style English on my blog, for instance. The only thing that makes me more “European”, besides the obvious fact that the Netherlands is in Europe, is the fact that I’m quite progressive.

Then there are other identities. I am part of many communities online that consider themselves as having a specific culture, such as the autistic/neurodivergent community. I however don’t really associate with that as a culture either. These are more things that define my identity than my culture. These include my gender, race (although that’s a bit problematic for me to admit as a white person, but it’s true), etc.

Not good, but better than January.

Wanted to share that my husband did bring the unicorn cookie/clay cutters that were supposed to be my Valentine’s Day present last Sunday. One is a rainbow, the next a unicorn head and one a unicorn. I haven’t yet had the chance to try them out.
